Tablea Chocolate Oatmeal Chip Cookies

Last weekend, I decided to bake chocolate chip cookies. This is definitely a comfort food for me, I am not much of a cake person, but I am definitely a cookie person! When I looked at our cupboard, no cocoa powder was in sight so I used tablea chocolate instead. Here is the recipe:


1 cup cubed butter
1 ¼ brown sugar
1 egg
1 tsp vanilla
1 ¼ cups all-purpose flour
2 pcs tablea chocolate, melted
1 tsp baking soda
¼ tsp salt
2 cups rolled oats
1 cup chocolate chips
1 cup coarsely chopped cashews


Preheat oven to 375F and grease two baking trays

In a mixing bowl, cream butter then slowly add brown sugar. Beat until fluffy.

Add egg, vanilla and chocolate mixture and beat until soft.

Combine dry ingredients: flour, baking soda and salt. Add to the batter and mix until blended well.

Fold in the rolled oats, chocolate chips and cashews. It is better to use rolled oats rather than quick cooking oats for better texture and more digestion-friendly fiber.

Drop by tablespoons on the greased baking trays and they put in the oven. Bake for about 15-20 minutes.

The edges would be lightly brown by then. Cool and then store.

Thankfully the whole family loved it! My husband even asked for seconds... and thirds! hahaha!
